Tea-riffic Recipes for an Aussie Summers Day

This is literally the most exciting thing I’ve discovered in recent weeks. I am a genius. I am a domestic goddess. I am a culinary whizz. I am the Queen of Tea! I’m also very humble… *adjusts crown*.

If you’re in Perth, you may have noticed that it has suddenly got DAMN HOT UP IN HERRRRRRE! Seriously, I’m melting… and It’s only mid-November. As a pommie redhead I am quite scared of what January and February are going to bring - #YoullFindMeInTheShade.

So since I’m no longer feeling like I can even handle a cup of tea before bed, my mind wandered to iced tea. Years ago I loved cracking open a refreshing bottle of iced tea, Peach was my absolute favourite. However since we are all now much more savvy about the sugar content of such drinks, I can’t bring myself to buy them. Also, as we know, I struggle with my water intake sooooo much. I’m getting better now that it’s heating up, but I still get bored of plane old water.

And so, Katie’s miraculously delicious infused fresh iced teas were born this week! Note to self – may need to work on a shorter name for them.

I have tested so many ingredient combinations this week, and yes, a lot failed. But fear not! I’m sharing with you my absolute fave combinations that have quickly taken pride of place in my fridge.


Find the full method below, just switch out the below combinations!

Raspberry & fresh mint – 1 ½ cups frozen raspberries, 1 sprig of fresh mint (torn up), 1 peppermint tea bag

Mulled Apple – 1 apple (sliced and slightly muddled), 2 star anise, 5 cloves, 1 cinnamon stick

Pear & Ginger – 1 pear (sliced and slightly muddled), 1 inch of ginger (sliced and slightly muddled)

Peach & Rosemary – 1 peach (sliced and slightly muddled), 2 sprigs of fresh rosemary


METHOD

The world’s most simple recipe… here we go. Try to keep up…

  1. Fill a large saucepan with approximately 2 litres of water

  2. Add two black tea bags

  3. Add your infusion flavours of choice

  4. Bring pan to the boil

  5. Reduce to a simmer for 15-20 minutes

  6. Strain the liquid into a jug through a sieve

  7. Strain a second time through 3 sheets of paper towel and a funnel as you decant into a glass bottle.

  8. Pop it in the fridge ready to enjoy over ice any time you like! It will keep for up to a week.

Now I love that this is a sugar free, healthy way to get a bit of a sweet kick and up my water intake. However, if you find you’d rather it a little sweeter, add a couple of drops of liquid stevia to you glass each time you pour yourself a cold one.

Try out other flavour combos and let me know what you come up with! I think my next tester will be strawberry and basil, and maybe mango and blueberry.
